Chickpea Tuna Sandwhich

“Put your Fish cravings in their place. Choose healthier alternatives like this chickpea tuna sandwich”.


3 cups freshly cooked chickpeas or canned chickpeas (I recommend rinsed, cleaned and fresh chickpeas).
1 red bell pepper, diced into small squares
2 stalks celery, finely diced
1/2 small red onion, finely diced
1/4 cup approximately just mayo (vegan mayonnaise)
1/2 teaspoon pink Himalayan salt
1/4 teaspoon lemon pepper seasoning
optional: extras like mustard, dill, etc. (I added spicy mustard)


Step One(1)

Add cooked and drained from water garbanzo beans to a high powered blender or food processor and pulse for 1 minute or until beans look like they do in the picture.

Step Two(2)

Add all ingredients in a medium to large size bowl and mix until all ingredients are evenly mixed.

Step Three(3)

I topped the sandwiches with alfalfa sprouts and grilled seasoned avocados. This ” tuna” made from garbanzo beans also complements sliced cucumbers, vegan golden round crackers, or fresh romaine lettuce.


If you have chickpea tuna leftovers, place “tuna” in an airtight container, and refrigerate up to five (5) days after the cooked date.
